Participants joined me for another cooking adventure. This time: Baked Chicken and Vegetables.
If you cook along, you need the following:
·     4 bone-in, skin-on chicken thighs (or breasts)
·     2 tablespoons of olive oil
·     1 teaspoon garlic powder
·     1 teaspoon dried thyme
·     1 teaspoon paprika
·     Salt and freshly ground black pepper, to taste
·     1 1/2 cups baby potatoes, halved or quartered.
·     1 cup carrots, sliced into rounds or sticks
·     1 bell pepper, chopped into bite-sized pieces
·     1 small red onion, sliced
·     1 zucchini, sliced into rounds (optional)
·     1 tablespoon fresh parsley, chopped (for garnish)
·     parchment paper or cooking spray
·     Large Baking Sheet
·     Oven
