20251014 Herbies Community Cooking Corner

Participants got  ready for another cooking adventure. This time: Japanese Chicken Curry Stew presented by Sherrie. If you cook along, you need the following:

  • 2 LBS Chicken thighs, skin on and boneless
  • 4 TBSP Neutral oil, divided.
  • 1 Large Vidalia onion-chopped
  • 3 Large carrots-peeled and chopped or one 16ounce bag baby carrots-whole
  • 2 Large Yellow Finn or Yukon gold potatoes-peeled and cubed
  • 3 Cups Chicken or vegetable stock-plus more if needed
  • Half a box curry roux blocks-chopped-House Vermont brand used in this recipe-S&B brand also a good option
  • 2 TBSP Cornstarch
  • cold water
