20251014 Herbies Community Cooking Corner

Participants got ready for another cooking adventure. This time: Japanese Chicken Curry Stew presented by Sherrie. If you cook along, you need the following:
- 2 LBS Chicken thighs, skin on and boneless
- 4 TBSP Neutral oil, divided.
- 1 Large Vidalia onion-chopped
- 3 Large carrots-peeled and chopped or one 16ounce bag baby carrots-whole
- 2 Large Yellow Finn or Yukon gold potatoes-peeled and cubed
- 3 Cups Chicken or vegetable stock-plus more if needed
- Half a box curry roux blocks-chopped-House Vermont brand used in this recipe-S&B brand also a good option
- 2 TBSP Cornstarch
- cold water
